Cherry Tomato and Cucumber Salad
To encourage healthy eating, this easy salad can't be beat. The grape
variety of cherry tomato is available and delicious all year round.
Ingredients:
Serves One (This recipe can easily be increased to serve a larger crowd.)
1 cup cherry tomatoes, halved 1/2 cucumber, peeled if waxy, seeded,
chopped 1 tablespoon olive oil 1 tablespoon fresh lemon juice, or to taste Salt and
pepper
Directions:
Combine tomatoes and cucumber. Toss with olive oil and lemon juice. Salt
and pepper to taste.
