Chilled Avocado Soup
This tasty soup is a snap to prepare and quite refreshing on a warm day.
Ingredients:
Makes 6 one-half cup servings
2 large ripe avocados 2 cups canned low-sodium chicken broth 3 tablespoons
fresh lemon juice 1 cup buttermilk ½ teaspoon curry powder ¾ teaspoon
salt or to taste (if you use regular chicken broth, omit
salt) For garnish: 1 cup plain yogurt or sour cream
1. Peel avocados.
2. Cut 1 ½ of the avocados into pieces and place in processor or blender. (The
other half will be chopped and used for garnish. If not using right away,
sprinkle with extra lemon juice to prevent discoloring.)
3. Add chicken broth and lemon juice and process until smooth.
4. Add buttermilk, salt, and curry powder to processor. Mix well. Chill for 2
hours.
5. Garnish with reserved avocado and a dollop of yogurt or sour cream.
