Ingredients:
1 tbsp minced onion
1 serrano or jalapeno pepper, sliced
1 tbsp minced cilantro
1 lime, juiced
2 large avocados
1 large tomato, peeled and chopped (optional)

Guacamole




1. Combine the onion, pepper, cilantro, lime juice and a pinch of salt in a mortar. Work the mixture into a wet paste.
2. Add avocado and mash to a coarse paste. Add tomato and mix to incorporate. Season with salt and additional lime to taste. Serve with freshly baked or fried corn tortilla chips.
