Ingredients
Makes 1 drink

 2 ounces pineapple vodka
  (see recipe that follows)
Juice of 1/2 lime
 1 teaspoon sugar
Club soda as needed

Pineapple Vodka
1 ripe pineapple, peeled, cored,
  and sliced into rings
1 liter bottle good-quality vodka

Island Getaway Cocktail
Make your own pineapple vodka as the basis for the Island Getaway, a tropical version of vodka and tonic.

Pour pineapple vodka over crushed ice in a tall glass. Stir in lime juice and sugar. Add club soda to taste. Garnish with wedges of lime and pineapple, if desired.

 
Pineapple Vodka


Place the pineapple rings in a large, wide-mouth jar or a large glass container with a spigot. Pour in the vodka so that it completely covers the pineapple rings. Cover the jar and let the pineapple infuse the vodka for at least 10 days, refrigerated, before using. Refill the jar with vodka to keep the pineapple covered for a second “brew.”
