Raspberry Spinach Salad
This delicious salad adds even more Valentine color to your table. If you don’t
have raspberry vinegar, make a version earlier in the week by warming a cup of
vinegar in the microwave, adding 1/2 cup raspberries and 2 Tbsp. sugar, sealing
tightly and letting sit in a warm place. Drain off vinegar to use in recipe.
Ingredients:
Makes 2 servings
1 Tbsp. raspberry vinegar 1 Tbsp.
raspberry jam 3 Tbsp. canola oil 10 oz. spinach, rinsed and drained 1/4
cup chopped Macadamia nuts 1/2 cup fresh raspberries
1. In small bowl, whisk
together the vinegar and jam. Add oil
little by little, whisking continuously
until blended. 2. Tear the
fresh spinach into bite-sized pieces and place in
salad bowl. Add the
nuts and berries. Just before serving, add the dressing and
toss
all.
